Breton Butter Cake

Today’s cake recipe is one I’ve tested two days in a row, which my friends absolutely loved! While I was in Azerbaijan, I made sure to save some recipes from a Russian recipe book that my mom had borrowed, including this Breton butter cake. Now, to be honest, I had never heard about it before, but my friend requested me to bake something light and not overwhelmingly sweet, so I decided to test this one out. It was so tasty that it was requested again the very next day 😀 The cake is enough for up to 10-12 people, provided that no one wants a second slice (with my experience, everyone will ask for one :D).

  • 250 gr. butter
  • 250 gr. sugar
  • 250 gr. flour
  • 4 eggs
  • 1 egg yolk
  • 2 tablespoons milk

The preparation is very easy, as all you have to do is mix the butter (which you should cut into small chunks), sugar, flour, and eggs. Then you place this batter into a 20 cm. cake pan that you should butter and flour, even the batter out, and using a fork draw some lines. Lastly, you have to mix the egg yolk with a bit of milk and pour that over your batter. The actual baking process is time-consuming, however, as you have to wait for an entire hour at 175 degrees Celsius for it to be ready. In the end, you are left with a cake that is a bit firm on the outside, but fluffy and soft on the inside. Overall, I believe this is a recipe I will be using quite frequently.
