Good evening from Ankara!
My sweet tooth was reminding me it was time to bake again, but with little time on hand, I decided to find a quick and easy chocolate chip muffin recipe. Luckily for me, I stumbled upon this one by Chelsea Sugar (yes, a sugar company from New Zealand :D), which requires minimal ingredients, no mixer, and little time!
Normally I have to convert measurements from cups to grams using some kind of online measurement chart, which is not always accurate; about a month ago my sister bought these super cute and colorful cups, so this time I directly used the recipe without any conversions, yay š
Chocolate Chip Muffins (12 pieces)
- 2 cups flour
- 100 gr. melted butter (I used unsalted)
- 1 cup milk
- 3/4 cup sugar
- 1/2 cup chocolate chips
- 2 eggs
- 4 teaspoons baking powder (2 packets)
- 1/2 teaspoon vanilla extra or powder
- pinch of salt
I used two “different” types of chocolate chips – some leftover small ones I had and then some chunky ones. The chunky ones are so delicious, by the way! I couldn’t resist eating a handful as I added them to the batter, haha.
All you have to do is melt the butter and then mix everything in one bowl. I used a whisk and mixed everything by hand, adding the chocolate chips at the very end. Lastly, I slightly buttered my silicone muffin cups and filled them up almost to the top, adding a few more chocolate chips on top.
This recipe yields a total of 12, but my oven is small and my muffin pan has 6 cups, so I had to use two, and wait for the first batch to bake before baking the second. You should bake it at 220 degrees Celsius for about 20 minutes. That’s all! š (I slightly over-kept mine, so they’re a little darker than they should be – keep an eye on them!!)
