Oladushki (Russian Pancakes)

Happy Friday!

I usually have quick breakfasts, but today my morning class was cancelled, so I decided to make some oladushki, which are a type of Russian pancakes. I’m aware this isn’t a particular dessert I baked, but I still figured I could share the recipe with all of you 🙂

Unlike regular pancakes, these are small; they’re made with yogurt and can be served with different things. Today I had them with honey, but most households usually opt for sweet jam or smetana (sour cream). Russians also have another type of pancakes called blini, but those are thin and look like crepes. Although I am from Azerbaijan, this is something many families eat, especially on weekends! I personally associate them with Sunday mornings, when I would wake up to the smell of my mom’s oladushki on the table beside a jar of homemade jam.

I have been using this recipe when making oladushki, which I find very simple. I must warn you that you will likely smell like oil once you’re done making them, but it’s worth the taste 😛

  • 250 ml. yogurt
  • 1 egg
  • 100 gr. flour
  • 2.5 teaspoons sugar
  • 1 teaspoon baking powder
  • pinch of salt

Now I can’t tell you exactly how many this yields, but it was enough to fill up 3 people! If I were to give an estimate, it would probably be between 20-25 pieces. All you have to do is mix everything in one bowl and then fry in a pan. The time it’ll require depends on the size of your pan and pancakes – I used a tablespoon for the portion and fried about 4-5 at a time. In total I think it took me about 25 minutes.
