Today’s recipe choice is quite a fun one, as I was pretty excited to try out a cookie cake for the very first time. My recipe hunt started off by Googling desserts with cornstarch, as I bought some a while ago but never ended up using it. As a result, I landed on a website called yummly.co, where you answer some questions about what type of recipe you’re looking for and have personalized results. I chose an M&M cookie cake from Stuck on Sweet, which I think is a great choice for a gloomy and cold day. (By the way, is it just in Turkey that it feels like fall or is it cold in other countries too? It’s almost June!!)
M&M Cookie Cake
- 1 1⁄4 cup (310 gr.) flour
- 1⁄4 teaspoon baking soda
- 1⁄2 teaspoon cornstarch
- 1⁄2 cup (125 gr.) unsalted butter (I used margarine)
- 1⁄2 cup (125 gr.) + 1⁄3 cup (60 gr.) sugar
- 1 large egg
- 1 teaspoon vanilla extract (I used powder)
- 1 cup (250 gr.) M&Ms
In total, you will not need more than 30-40 minutes for the preparation and baking time, which makes it quite an easy dessert to make. You will need a pie pan, two bowls, and should pre-heat your oven to 175 degrees Celsius before preparing the dough.
First mix the flour, salt, baking soda, and cornstarch in one bowl. If you’re using vanilla powder like me, then add it in with these other dry ingredients. Next use a mixer to cream the butter and sugar in a separate bowl, to which you will later add the egg. If you’re using vanilla extract, then add it during this step. Eventually mix in the flour mixture and once you have a consistent batter, use a spatula to disperse your M&Ms. I used a mixture of peanut butter and chocolate M&Ms, though primarily peanut butter; which kind you use is completely based on your preference. (Side note: The peanut butter M&Ms are generally bigger, so chocolate ones are a little easier to mix in.)
Place your dough in a greased or aluminum lined pie pan and use a spoon and/or your hands to even it out. It will be a little sticky, so don’t be surprised, it’s meant to be. Bake for approximately 20 minutes; you can bake it a little less in order to have a softer cookie or you can bake it a little longer to have it well-done. That’s all! Simple, right? 🙂 I can even recommend buying some vanilla ice cream to serve it alongside this cookie cake.
The only way I can describe the taste is by telling you to imagine a chocolate chip cookie, but instead of chocolate chips you have peanut butter and chocolate M&Ms! So delicious, I absolutely loved it! It went very well with my cup of tea 😀
I think the dough recipe is versatile enough to try it with some other ingredients, like Oreos or Skittles.
