Wow, it has been too long since I baked! (In case you missed out, I last baked a delicious red velvet cake.) I was traveling, hence the long pause on my blog, but now I am back and ready to try more new recipes 🙂 Today’s recipe is great if you like bananas or simply have 2-3 lying around. Using Yummly I came across these banana muffins from All She Cooks, which are so easy to make. I made two adjustments to the recipe: I only had 2 bananas, instead of 3, and I used only white sugar.
- 3 mashed bananas
- 1/4 cup (60 ml.) melted butter or margarine (I used margarine)
- 1/4 cup (60 ml.) milk
- 1 egg
- 1 teaspoon vanilla extract (I used powder)
- 1/2 cup brown sugar (I used white)
- 1/2 cup white sugar
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
In total this recipe yields 12 muffins, but it can also be used to make banana bread. All you have to do is mash the bananas and melt the butter before first mixing the bananas, butter, and milk, then beating in the egg, vanilla, sugar, and finishing off with the dry ingredients.
I baked for approximately 25 minutes at 180 degrees Celsius in two silicone muffin pans, but keep an eye, some people baked for only 15 minutes. If you’re not sure, you can insert a toothpick inside a muffin and if it comes out clean it means it’s ready. I love how all muffins came out looking the same and round on the top! They’re very sweet and soft, so I definitely recommend this easy recipe. Also, your entire kitchen will smell of bananas, so yummy!
