If you’re ever looking for a way to improve your mood, then give baking a go. As I was feeling a little down I decided to look for a recipe with the new chocolate chips that I bought today. A few months ago I made some delicious chocolate chip cookies, but I wanted to try something new, which is how I found the following chocolate chip cake recipe. The preparation is quite simple, but the baking takes approximately 40-55 minutes, so set some time aside for this dessert.
Chocolate Chip Cake
- 3 cups flour
- 2 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened (I used margarine)
- 1 cup + 2 tablespoons sugar
- 4 egg whites
- 3/4 cup buttermilk (I used regular milk + 1/2 tablespoon lemon juice)
- 2/3 cup chocolate chips
Pre-heat your oven to 325 Fahrenheit/160 Celsius. Sift your dry ingredients (flour, baking powder, salt) in one bowl and set aside. Beat your butter and sugar with an electric mixer in a new, bigger bowl. Add your egg whites one by one and mix until creamy. Then alternate with your buttermilk and flour mixture. Once everything is mixed, stir in your chocolate chips with a spatula. Pour your batter into a round cake pan (I used a 22 cm. cake pan lined with aluminum foil) and bake for 40-55 minutes; once you reach 40 minutes check your cake and if not ready then continue and check every five minutes. (By the way, the original recipe instructs to divide the batter into two 8 inch/20 cm. cake pans, but I decided to make a single layer.)
My cake took about 55 minutes and came out round and even on top, so I was very pleased! I was planning on making some chocolate ganache or frosting, but then decided such a chocolate bomb would be better for colder weather. I wish I had some vanilla ice cream, though! This is a filling, fluffy cake, with a great balance between sugar and chocolate. I definitely recommend you to try it, because I am sure you will like it.
