Chocolate Chip Banana Muffins

Good evening!

     Here’s another muffin recipe to add to my ever-growing list, which took only about 30 minutes from start to finish, and yields 12. (Speaking of which, you can check all the other muffins I’ve baked here.) This is a great one for banana lovers or for those who have some ripe bananas with no idea what to do with them 😀

Chocolate Chip Banana Muffins

  • 4 medium bananas
  • 1/3 cup (75 gr.) melted butter
  • 2/3 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla powder (or 1 teaspoon vanilla extract)
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

     Pre-heat your oven to 175°C/350°F and prepare 12-14 muffin pans by greasing them. As you can tell from my photos, I used some heart-shaped ones, which are a bit smaller than classic muffin pans, hence I had a total of 14. However, you can easily make a few more by not filling them till the top.

    Melt your butter and let it cool before you peel and put your bananas in a mixing bowl, which you will then have to mash together with the melted butter. After there are no more chunks, you can add the sugar and egg (as well as the vanilla extract, if you’re using that instead of powder). For this step I utilized an electric mixer just to make the process a bit faster/easier. Add your dry ingredients (vanilla powder, soda, salt, and flour), making sure to sift them. Don’t overmix, as otherwise your muffins will be a bit less soft. Finish by adding your chocolate chips and evenly mixing them into the batter with a spatula.

     Distribute the batter into your muffin pans and bake for 18-22 minutes. As always, use a toothpick to check the centers of the muffins as a guarantee that they are fully baked. Let them cool before removing them from the pans. Due to the cold weather, I placed mine on the balcony, which significantly sped up the cooling process.

    They’re moist and soft on the inside, with just the right amount of chocolate chips. The banana flavor is very prominent, so if desired feel free to reduce to 3 bananas. However, as I am a fan of banana bread, I really enjoyed the strong flavor. Overall, I’m fond of the recipe and definitely looking forward to eating some more muffins tomorrow morning as breakfast, with my tea of course!
